- 2 large Chicken Breasts, boneless and skinless
- 1 cup Buttermilk
- 1 cup All-Purpose Flour
- 1 teaspoon Paprika
- 1/2 teaspoon Garlic Powder
- Salt and Pepper, to taste
- 4 cups Mixed Greens (romaine, spinach, arugula)
- 1 cup Cherry Tomatoes, halved
- 1/2 Cucumber, sliced
- 1/4 Red Onion, thinly sliced
- 1 Avocado, diced
- 1/4 cup Feta Cheese, crumbled
Instructions
- Marinate chicken in buttermilk for at least 30 minutes.
- Mix flour, paprika, garlic powder, salt, and pepper in a bowl.
- Dredge chicken in the flour mixture, shaking off excess.
- Heat oil in a skillet and fry chicken for 6-7 minutes on each side.
- While the chicken cooks, prepare salad base with mixed greens and veggies.
- Slice the cooked chicken and place it on top of the salad.
- Sprinkle feta cheese and drizzle with dressing before serving.
