  • 1 small head of green cabbage, finely shredded
  • 1 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 cloves roasted garlic
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Begin by preparing the roasted garlic dip. Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for about 20-25 minutes, or until they are soft and golden. Allow to cool, then squeeze the garlic out of the skins into a bowl.
  2. In the bowl with the roasted garlic, add Greek yogurt, mayonnaise, lemon juice, salt, and pepper. Mix until smooth and creamy. Set aside to let the flavors meld.
  3. In a large mixing bowl, combine the finely shredded cabbage, grated Parmesan cheese, all-purpose flour, eggs, chopped parsley, minced garlic, onion powder, salt, and pepper. Mix well until the ingredients are combined and form a cohesive mixture.
  4. Heat oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the cabbage mixture into the skillet, flattening them slightly with the back of a spatula. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy. Remove from the skillet and drain on paper towels.
  5. Serve the crispy cabbage fritters warm, alongside the roasted garlic dip for a creamy and flavorful accompaniment.
