- Begin by preparing the roasted garlic dip. Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for about 20-25 minutes, or until they are soft and golden. Allow to cool, then squeeze the garlic out of the skins into a bowl.
- In the bowl with the roasted garlic, add Greek yogurt, mayonnaise, lemon juice, salt, and pepper. Mix until smooth and creamy. Set aside to let the flavors meld.
- In a large mixing bowl, combine the finely shredded cabbage, grated Parmesan cheese, all-purpose flour, eggs, chopped parsley, minced garlic, onion powder, salt, and pepper. Mix well until the ingredients are combined and form a cohesive mixture.
- Heat oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the cabbage mixture into the skillet, flattening them slightly with the back of a spatula. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy. Remove from the skillet and drain on paper towels.
- Serve the crispy cabbage fritters warm, alongside the roasted garlic dip for a creamy and flavorful accompaniment.
