Description

Crispy Parmesan Carrots are a delicious side dish featuring tender carrots baked with a crispy parmesan coating.


Ingredients

Scale
  • 6 medium carrots, peeled
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary, chopped
  • 2 cups (200 g) parmesan cheese, grated, divided
  • parsley, chopped for garnish

Instructions

  1. Preheat oven to 400°F and line a sheet pan with parchment paper.
  2. Cut the carrots crosswise, into 2-inch sections. Then, slice each section in half lengthwise.
  3. In a large bowl, combine the olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary. Mix well. Add the carrots, tossing to coat.
  4. Sprinkle 1 ½ cups of parmesan cheese over the sheet of parchment paper, enough for the carrots to cover.
  5. Place each carrot onto the parmesan-coated lined pan, cut side down, avoiding gaps between them.
  6. Sprinkle the remaining parmesan cheese on top of the carrots.
  7. Bake for 30-35 minutes, or until the carrots are easily pierced with a knife.
  8. Serve warm.

Notes

  • For air fryer: Line the basket with parchment paper and sprinkle parmesan cheese on top.
  • Add carrots, cut side down, and spray the tops with cooking spray.
  • Air fry at 375°F for 8-10 minutes, or until easily pierced with a knife.
