- 1 large egg

- 4 large onions, thinly sliced
- 2 cups beef broth
- 1 tsp fresh thyme leaves
- 1 cup shredded Gruyere cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, minced garlic, salt, and pepper. Mix until blended.
- Shape the mixture into 1.5-inch meatballs.
- In a skillet, heat olive oil over medium heat and caramelize sliced onions for about 15-20 minutes.
- Transfer caramelized onions to a crock pot; add beef broth and thyme.
- Place meatballs into the crock pot ensuring they are submerged in the sauce.
- Cover and cook on low for 4 hours until meatballs are cooked through.
- Transfer to an oven-safe dish, sprinkle with cheese, and broil for 2-3 minutes until melted.
- Serve warm garnished with chopped parsley.
Notes
- Make sure to caramelize the onions well for the best flavor.
- You can substitute Gruyere cheese with Swiss cheese if preferred.
