- 1 pound kielbasa, sliced
- 2 cups dried navy beans, soaked overnight
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup barbecue sauce
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- 4 cups chicken broth
Instructions
- Drain and rinse the soaked navy beans and set aside.
- In a large skillet over medium heat, add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove from heat and set aside.
- In the crockpot, combine the soaked beans, chopped onion, minced garlic, chopped bell pepper, diced tomatoes, barbecue sauce, brown sugar, Worcestershire sauce, smoked paprika, chili powder, salt, and pepper.
- Add the browned kielbasa to the crockpot and pour in the chicken broth, stirring to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beans are tender and the flavors have melded together.
- Serve hot, garnished with fresh herbs if desired.
Notes
- Make sure to soak the beans overnight for optimal tenderness.
- Feel free to add more spices for additional heat or flavor.
