A hearty and flavorful dish combining kielbasa and navy beans, perfect for a cozy meal.


Ingredients

  • 1 pound kielbasa, sliced
  • 2 cups dried navy beans, soaked overnight
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 cups chicken broth

Instructions

  1. Drain and rinse the soaked navy beans and set aside.
  2. In a large skillet over medium heat, add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove from heat and set aside.
  3. In the crockpot, combine the soaked beans, chopped onion, minced garlic, chopped bell pepper, diced tomatoes, barbecue sauce, brown sugar, Worcestershire sauce, smoked paprika, chili powder, salt, and pepper.
  4. Add the browned kielbasa to the crockpot and pour in the chicken broth, stirring to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beans are tender and the flavors have melded together.
  6. Serve hot, garnished with fresh herbs if desired.
