Description

A delicious and easy recipe for Crockpot Pineapple BBQ Chicken that is perfect for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup barbecue sauce (your favorite brand)
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot. Season with salt and pepper.
  2. In a medium bowl, combine the pineapple chunks, barbecue sauce, soy sauce, honey, minced garlic, ground ginger, and red pepper flakes. Stir well until all ingredients are fully incorporated.
  3. Pour the sauce mixture evenly over the chicken in the crockpot.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. Once cooked, shred the chicken using two forks and stir it back into the sauce.
  6. Serve the chicken warm, garnished with chopped green onions if desired.

Notes

  • This dish can be served over rice or noodles for a complete meal.
  • Adjust the spice level by adding more or less red pepper flakes as desired.
  • Leftovers can be stored in the refrigerator for up to 3 days.
