A delicious and easy recipe for Crockpot Pineapple BBQ Chicken that is perfect for any occasion.

- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1 cup barbecue sauce (your favorite brand)
- 1/4 cup soy sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- Place the chicken breasts in the bottom of the crockpot. Season with salt and pepper.
- In a medium bowl, combine the pineapple chunks, barbecue sauce, soy sauce, honey, minced garlic, ground ginger, and red pepper flakes. Stir well until all ingredients are fully incorporated.
- Pour the sauce mixture evenly over the chicken in the crockpot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
- Once cooked, shred the chicken using two forks and stir it back into the sauce.
- Serve the chicken warm, garnished with chopped green onions if desired.
Notes
- This dish can be served over rice or noodles for a complete meal.
- Adjust the spice level by adding more or less red pepper flakes as desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
