Description

- 2 cups cauliflower rice
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup bell peppers, diced
- 1/2 cup mushrooms, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup black olives, sliced
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add the olive oil. Once hot, add the cauliflower rice and sauté for 3-4 minutes until slightly tender. Season with salt, pepper, and Italian seasoning, stirring well to combine.
- In a large mixing bowl, combine the cooked cauliflower rice and marinara sauce, mixing until well incorporated.
- Transfer the mixture to a greased baking dish or oven-safe bowl, spreading it evenly.
- Top the cauliflower mixture with shredded mozzarella cheese, then layer with diced bell peppers, sliced mushrooms, cherry tomatoes, and black olives.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, let it cool for a few minutes, then garnish with fresh basil before serving.
