Description

A delicious low-carb pizza bowl made with cauliflower rice and topped with a variety of fresh toppings and gooey cheese.


Ingredients

  • 2 cups cauliflower rice
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup bell peppers, diced
  • 1/2 cup mushrooms, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add the olive oil. Once hot, add the cauliflower rice and sauté for 3-4 minutes until slightly tender. Season with salt, pepper, and Italian seasoning, stirring well to combine.
  3. In a large mixing bowl, combine the cooked cauliflower rice and marinara sauce, mixing until well incorporated.
  4. Transfer the mixture to a greased baking dish or oven-safe bowl, spreading it evenly.
  5. Top the cauliflower mixture with shredded mozzarella cheese, then layer with diced bell peppers, sliced mushrooms, cherry tomatoes, and black olives.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  7. Remove from the oven, let it cool for a few minutes, then garnish with fresh basil before serving.
