- 1 cup basmati rice
- 1 ¾ cups water or vegetable broth
- 1 ripe mango, diced
- 1 lime, zested and juiced
- ½ cup fresh cilantro, chopped
- 1 tablespoon olive oil or coconut oil
- Salt, to taste
- Pepper, to taste
Instructions
- Rinse the rice under cold water until the water runs clear. This helps prevent the rice from being sticky.
- In a medium saucepan, combine the rinsed rice with 1 ¾ cups of water or vegetable broth and a pinch of salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, until all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.
- Uncover the rice and fluff it gently with a fork to make it light and fluffy.
- In the meantime, prepare your mango and lime. Dice the mango and set it aside. Zest and juice the lime to have about 2 tablespoons of juice ready.
- In a large mixing bowl, combine the cooked rice, diced mango, lime zest, lime juice, and chopped cilantro. Drizzle in the olive oil or coconut oil, then season with salt and pepper to taste.
- Gently stir everything together, being careful not to mash the mango pieces. Taste and adjust the seasoning if needed.
- Serve the mango lime rice in a beautiful bowl, garnished with lime wedges and extra cilantro if desired. Enjoy this flavorful dish warm or at room temperature!
