- 2 peaches
- 1 cup halved and pitted cherries
- 1 large handful cilantro (stems discarded, chopped finely)
- 1 jalapeño pepper (chopped)
- 1/2 small red onion (chopped finely)
- 1 1/2 limes (juiced, zest from 1 lime)
- Salt, to taste
Instructions
- Prepare the Cherries: Begin by using a cherry pitter to remove the seeds from your cherries.
- Mix the Ingredients: Once the cherries are pitted, place them in a large bowl. Then, add the remaining ingredients you plan to use for your salsa. Combine everything thoroughly by mixing well.
- Chill and Macerate: To allow the flavors to meld together, place the bowl of salsa in the refrigerator. Let it chill and macerate for at least 15 minutes before serving.

- This salsa is great as a dip or as a topping for grilled meats.
- Adjust the spiciness by adding more or less jalapeño pepper.
