- 1 pound sausage
- 1 cup rice
- 2 cups chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon paprika
- 1/2 teaspoon thyme
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 1/2 cup frozen peas
- 1/4 cup fresh parsley, chopped
Instructions
- Heat the olive oil in a large skillet or pan over medium heat.
- Add the sausage to the pan, breaking it apart with a spoon or spatula as it cooks.
- Cook the sausage for about 5-7 minutes, until it is browned and cooked through.
- Once the sausage is cooked, remove it from the pan and set it aside, leaving the drippings in the pan.
- Add the chopped onion to the same pan and sauté it for about 3-4 minutes, until it becomes soft and translucent.
- Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
- Add the chopped bell pepper to the pan and cook for another 3-4 minutes, until it begins to soften.
- Sprinkle in the paprika, thyme, black pepper, and cayenne pepper, stirring to coat the vegetables evenly with the spices.
- Pour in the rice and stir it to combine with the vegetables and spices, allowing the rice to lightly toast for about 1-2 minutes.
- Pour the chicken broth into the pan, scraping any browned bits off the bottom of the pan with a wooden spoon.
- Bring the mixture to a simmer, then reduce the heat to low.
- Cover the pan with a lid and let the rice cook for 18-20 minutes, or until the rice has absorbed the broth and is tender.
- After the rice is cooked, stir in the frozen peas and the cooked sausage.
- Cover the pan again and let it sit for 5 minutes, allowing the peas to heat through and the sausage to warm.
- Sprinkle the chopped fresh parsley over the top before serving.
