Description

Ingredients

  • 1 pound sausage
  • 1 cup rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 1/2 cup frozen peas
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large skillet or pan over medium heat.
  2. Add the sausage to the pan, breaking it apart with a spoon or spatula as it cooks.
  3. Cook the sausage for about 5-7 minutes, until it is browned and cooked through.
  4. Once the sausage is cooked, remove it from the pan and set it aside, leaving the drippings in the pan.
  5. Add the chopped onion to the same pan and sauté it for about 3-4 minutes, until it becomes soft and translucent.
  6. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
  7. Add the chopped bell pepper to the pan and cook for another 3-4 minutes, until it begins to soften.
  8. Sprinkle in the paprika, thyme, black pepper, and cayenne pepper, stirring to coat the vegetables evenly with the spices.
  9. Pour in the rice and stir it to combine with the vegetables and spices, allowing the rice to lightly toast for about 1-2 minutes.
  10. Pour the chicken broth into the pan, scraping any browned bits off the bottom of the pan with a wooden spoon.
  11. Bring the mixture to a simmer, then reduce the heat to low.
  12. Cover the pan with a lid and let the rice cook for 18-20 minutes, or until the rice has absorbed the broth and is tender.
  13. After the rice is cooked, stir in the frozen peas and the cooked sausage.
  14. Cover the pan again and let it sit for 5 minutes, allowing the peas to heat through and the sausage to warm.
  15. Sprinkle the chopped fresh parsley over the top before serving.
