Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- In a large mixing bowl, beat the eggs, sugar, buttermilk, oil, and vanilla. Stir in the mashed bananas until smooth.
- Gradually add the dry ingredients to the wet mixture. Mix until just combined—don’t overmix.
- Divide the batter evenly between the two pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
- In a large bowl, beat the softened butter until creamy and fluffy.
- Gradually add in the powdered sugar and cocoa powder, mixing well between each addition.
- Add the heavy cream, vanilla extract, and a pinch of salt, then beat until the frosting is silky smooth and spreadable.
- Place one cooled cake layer on your serving plate or cake stand. Spread a generous amount of frosting evenly on top.
- Add the second layer and frost the top and sides of the cake with the remaining frosting.
- Sprinkle with chocolate shavings and arrange banana slices for an elegant finish.
- Chill the cake for 30 minutes before slicing to allow the frosting to set and the flavors to meld beautifully.
