Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large mixing bowl, beat the eggs, sugar, buttermilk, oil, and vanilla. Stir in the mashed bananas until smooth.
  4. Gradually add the dry ingredients to the wet mixture. Mix until just combined—don’t overmix.
  5. Divide the batter evenly between the two pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  7. In a large bowl, beat the softened butter until creamy and fluffy.
  8. Gradually add in the powdered sugar and cocoa powder, mixing well between each addition.
  9. Add the heavy cream, vanilla extract, and a pinch of salt, then beat until the frosting is silky smooth and spreadable.
  10. Place one cooled cake layer on your serving plate or cake stand. Spread a generous amount of frosting evenly on top.
  11. Add the second layer and frost the top and sides of the cake with the remaining frosting.
  12. Sprinkle with chocolate shavings and arrange banana slices for an elegant finish.
  13. Chill the cake for 30 minutes before slicing to allow the frosting to set and the flavors to meld beautifully.
