Description

A quick and easy one-pot meal featuring spaghetti and tender chicken in a creamy tomato sauce.


Ingredients

  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Add the chicken pieces and cook for 5-7 minutes, or until they are golden brown and cooked through. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onion and garlic, sautéing for 2-3 minutes, or until the onion becomes translucent. Then, add the bell pepper and cook for another 2-3 minutes.
  4. Stir in the diced tomatoes (with juices), chicken broth, heavy cream, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  5. Return the cooked chicken to the pot and stir to combine. Let it cook for an additional 5 minutes to allow the flavors to meld.
  6. Add the spaghetti back into the pot, tossing everything together until the pasta is well coated with the sauce.
  7. Sprinkle the shredded mozzarella cheese on top and allow it to melt for a few minutes.
  8. Garnish with fresh parsley before serving.

Notes

  • This recipe can be easily doubled for larger gatherings.
  • Feel free to add more vegetables like spinach or mushrooms for added nutrition.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
