Description
A quick and easy one-pot meal featuring spaghetti and tender chicken in a creamy tomato sauce.

- 8 ounces spaghetti
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
- In a large pot, cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In the same pot, heat olive oil over medium heat. Add the chicken pieces and cook for 5-7 minutes, or until they are golden brown and cooked through. Remove the chicken from the pot and set aside.
- In the same pot, add the onion and garlic, sautéing for 2-3 minutes, or until the onion becomes translucent. Then, add the bell pepper and cook for another 2-3 minutes.
- Stir in the diced tomatoes (with juices), chicken broth, heavy cream, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
- Return the cooked chicken to the pot and stir to combine. Let it cook for an additional 5 minutes to allow the flavors to meld.
- Add the spaghetti back into the pot, tossing everything together until the pasta is well coated with the sauce.
- Sprinkle the shredded mozzarella cheese on top and allow it to melt for a few minutes.
- Garnish with fresh parsley before serving.
Notes
- This recipe can be easily doubled for larger gatherings.
- Feel free to add more vegetables like spinach or mushrooms for added nutrition.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
