Easy & Delicious Jam & Coconut Dream Bars are a delightful treat combining a buttery crust, fruity jam, and a sweet coconut topping.

- 1/2 tsp vanilla extract
- 1/4 cup all-purpose flour
- 1/4 tsp baking powder
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- Pinch of salt
- 3/4 cup fruit jam (raspberry, strawberry, or your choice)
- 2 large eggs
- 1 cup brown sugar
- 1 1/2 cups shredded sweetened coconut
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, cream together butter and granulated sugar until light and fluffy. Mix in the flour and salt until combined.
- Press the mixture evenly into the bottom of the prepared pan to form the crust. Bake for 15 minutes or until lightly golden.
- Remove the crust from the oven and spread the jam evenly over the hot crust.
- In another bowl, whisk together eggs, brown sugar, and vanilla. Stir in flour and baking powder until just combined. Fold in the shredded coconut.
- Pour the coconut mixture over the jam layer and spread evenly.
- Bake for an additional 25–30 minutes or until the top is golden and set.
- Let cool completely before slicing into bars. Store in an airtight container.

- Feel free to use any fruit jam of your choice.
- These bars can be stored in an airtight container for up to a week.
