Description

Easy & Delicious Jam & Coconut Dream Bars are a delightful treat combining a buttery crust, fruity jam, and a sweet coconut topping.


Ingredients

Scale
  • 1/2 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • Pinch of salt
  • 3/4 cup fruit jam (raspberry, strawberry, or your choice)
  • 2 large eggs
  • 1 cup brown sugar
  • 1 1/2 cups shredded sweetened coconut

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, cream together butter and granulated sugar until light and fluffy. Mix in the flour and salt until combined.
  3. Press the mixture evenly into the bottom of the prepared pan to form the crust. Bake for 15 minutes or until lightly golden.
  4. Remove the crust from the oven and spread the jam evenly over the hot crust.
  5. In another bowl, whisk together eggs, brown sugar, and vanilla. Stir in flour and baking powder until just combined. Fold in the shredded coconut.
  6. Pour the coconut mixture over the jam layer and spread evenly.
  7. Bake for an additional 25–30 minutes or until the top is golden and set.
  8. Let cool completely before slicing into bars. Store in an airtight container.
