Description
Deliciously soft cinnamon cookies filled with creamy dulce de leche, perfect for any occasion.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sugar (for rolling)
- 2 tsp ground cinnamon
- 1 tbsp butter (for filling)
- 1 can (13.4 oz) dulce de leche
Instructions
- Cream together the softened butter and 1 cup of granulated sugar for about 4 minutes, until light and fluffy.
- Add the egg and vanilla extract, and mix for another minute until fully incorporated.
- Gradually stir in the all-purpose flour, baking soda, and salt until a dough forms.
- Chill the dough in the refrigerator for 10-15 minutes.
- Combine 1/2 cup granulated sugar and 2 teaspoons ground cinnamon in a shallow bowl.
- Roll the chilled dough into 16 to 24 balls and coat each in the cinnamon-sugar mixture.
- Place the coated dough on a parchment- or Silpat-lined baking sheet.
- Bake in a preheated 350°F (175°C) oven for 9 to 11 minutes.
- Sprinkle with remaining cinnamon-sugar mixture as soon as cookies come out of the oven.
- Melt 1 tablespoon of butter in a small saucepan and stir in the dulce de leche until smooth.
- Once cookies are cool, spread dulce de leche on the bottom of one cookie and top with another to create a sandwich.
- Let the assembled cookies rest for an hour to set up the filling.
Notes
- Chilling the dough makes it easier to handle.
- For a lovely finish, sprinkle cinnamon-sugar immediately after baking.
- Letting cookies rest allows flavors to meld.
