Description

Deliciously soft cinnamon cookies filled with creamy dulce de leche, perfect for any occasion.


Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar (for rolling)
  • 2 tsp ground cinnamon
  • 1 tbsp butter (for filling)
  • 1 can (13.4 oz) dulce de leche

Instructions

  1. Cream together the softened butter and 1 cup of granulated sugar for about 4 minutes, until light and fluffy.
  2. Add the egg and vanilla extract, and mix for another minute until fully incorporated.
  3. Gradually stir in the all-purpose flour, baking soda, and salt until a dough forms.
  4. Chill the dough in the refrigerator for 10-15 minutes.
  5. Combine 1/2 cup granulated sugar and 2 teaspoons ground cinnamon in a shallow bowl.
  6. Roll the chilled dough into 16 to 24 balls and coat each in the cinnamon-sugar mixture.
  7. Place the coated dough on a parchment- or Silpat-lined baking sheet.
  8. Bake in a preheated 350°F (175°C) oven for 9 to 11 minutes.
  9. Sprinkle with remaining cinnamon-sugar mixture as soon as cookies come out of the oven.
  10. Melt 1 tablespoon of butter in a small saucepan and stir in the dulce de leche until smooth.
  11. Once cookies are cool, spread dulce de leche on the bottom of one cookie and top with another to create a sandwich.
  12. Let the assembled cookies rest for an hour to set up the filling.

Notes

  • Chilling the dough makes it easier to handle.
  • For a lovely finish, sprinkle cinnamon-sugar immediately after baking.
  • Letting cookies rest allows flavors to meld.
