Description
A hearty and flavorful casserole featuring ground beef, rice, and mixed vegetables, topped with melted cheddar cheese.

- 1 pound of ground beef
- 1 cup of uncooked white rice
- 2 cups of beef broth
- 1 can of diced tomatoes (14.5 oz), undrained
- 1 cup of frozen mixed vegetables
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of Italian seasoning
- Salt and pepper, to taste
- 1 cup of shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until it’s cooked through. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet, and cook for 2-3 minutes, or until the onion becomes translucent.
- Stir in the uncooked rice, beef broth, diced tomatoes with their juice, frozen mixed vegetables, and Italian seasoning. Add salt and pepper to taste. Bring this mixture to a boil.
- Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
- Transfer the mixture to a greased 9×13 inch baking dish. Evenly sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
Notes
- Feel free to substitute the ground beef with ground turkey for a lighter option.
- For additional flavor, add your favorite spices or hot sauce.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
