Description

A delightful and refreshing treat, Easy Lemon Fudge is perfect for satisfying your sweet tooth with a zesty twist.


Ingredients

Scale
  • ½ cup butter
  • ½ cup milk
  • 2 (2.9 ounce) packages lemon cook & serve pudding & pie filling (dry mix only)
  • 3 ½ cups powdered sugar
  • 1 tablespoon milk (as needed)

Instructions

  1. Line a 9″x9″ pan with wax paper or parchment paper.
  2. In a saucepan, melt the butter over medium-high heat. Stir frequently to prevent burning.
  3. Add the milk and dry pudding mix to the saucepan. Stir and cook for 1 minute. The mixture should thicken and pull away from the sides of the pan.
  4. Remove from heat and stir in the powdered sugar. This will be thick; you may need to use an electric mixer. If the mixture is too stiff, add 1 tablespoon of milk at a time until it’s easier to stir.
  5. Press the fudge mixture into the prepared pan. Dust with extra powdered sugar, if desired.
  6. Refrigerate for a few hours.
  7. Slice into 1-inch pieces.

Notes

  • For a sweeter taste, dust with additional powdered sugar before serving.
  • Store any leftovers in an airtight container in the refrigerator.
