Ingredients

  • 1 cup dry breadcrumbs
  • 1 cup whole milk
  • 2 large eggs
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup ketchup
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon yellow mustard

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or lightly grease a standard loaf pan.
  2. In a large mixing bowl, gently combine the ground beef, breadcrumbs, milk, eggs, onion, garlic, Worcestershire sauce, salt, and pepper. Mix by hand or with a spatula until ingredients are just blended; avoid overmixing to maintain tenderness.
  3. Transfer the mixture to the prepared sheet or loaf pan and shape into an even loaf approximately 8 inches by 4 inches if free-form. Press gently to compact without overhandling.
  4. In a small bowl, whisk together ketchup, brown sugar, and mustard until smooth. Evenly spread half the glaze over the top of the meatloaf.
  5. Place loaf in the oven and bake for 45 minutes on the center rack.
  6. Remove from oven and brush the remaining glaze over the meatloaf. Return to oven and continue baking for 15 to 20 minutes, or until internal temperature reaches 160°F (70°C).
  7. Remove meatloaf from oven and allow to rest for at least 10 minutes to retain juiciness and structure. Slice and serve warm.
  8. Enjoy with classic accompaniments such as mashed potatoes, roasted vegetables, or use leftovers for sandwiches.
