- 2 pounds ground beef
- 1 cup dry breadcrumbs
- 1 cup whole milk
- 2 large eggs
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup ketchup
- 1/4 cup light brown sugar, packed
- 1 tablespoon yellow mustard
Instructions
- Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or lightly grease a standard loaf pan.
- In a large mixing bowl, gently combine the ground beef, breadcrumbs, milk, eggs, onion, garlic, Worcestershire sauce, salt, and pepper. Mix by hand or with a spatula until ingredients are just blended; avoid overmixing to maintain tenderness.
- Transfer the mixture to the prepared sheet or loaf pan and shape into an even loaf approximately 8 inches by 4 inches if free-form. Press gently to compact without overhandling.
- In a small bowl, whisk together ketchup, brown sugar, and mustard until smooth. Evenly spread half the glaze over the top of the meatloaf.
- Place loaf in the oven and bake for 45 minutes on the center rack.
- Remove from oven and brush the remaining glaze over the meatloaf. Return to oven and continue baking for 15 to 20 minutes, or until internal temperature reaches 160°F (70°C).
- Remove meatloaf from oven and allow to rest for at least 10 minutes to retain juiciness and structure. Slice and serve warm.
- Enjoy with classic accompaniments such as mashed potatoes, roasted vegetables, or use leftovers for sandwiches.
