  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups shelled pistachios (unsalted, roughly chopped)
  • Green food coloring (optional, for a vibrant look)
  • Pinch of salt (to enhance flavors)

Instructions

  1. Prepare the Baking Pan: Line an 8×8-inch baking pan with parchment paper or aluminum foil, leaving some overhang on the sides.
  2. Melt the White Chocolate: In a medium saucepan, combine the white chocolate chips and sweetened condensed milk. Heat over low heat, stirring constantly, until the chocolate is completely melted and the mixture is smooth.
  3. Add Flavor and Color: Remove the saucepan from heat and stir in the vanilla extract. If you’d like a vibrant green color, add a few drops of green food coloring and mix until evenly distributed.
  4. Incorporate Pistachios: Fold in 1 cup of the chopped pistachios into the fudge mixture, reserving the remaining ½ cup for topping.
  5. Set the Fudge: Pour the fudge mixture into the prepared baking pan. Use a spatula to spread it evenly. Sprinkle the remaining ½ cup of chopped pistachios on top, gently pressing them into the fudge.
  6. Chill and Set: Refrigerate the fudge for at least 2-3 hours, or until it’s firm. Once set, lift the fudge out of the pan using the parchment paper overhang and cut it into small squares.
