Description

Easy Porcupine Meatballs are a delicious and convenient dinner option that combines meat and rice in flavorful meatballs simmered in a savory sauce.

Ingredients

Scale
  • 1 lb ground beef
  • 1/2 cup uncooked long grain white rice
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 (15 oz) can tomato sauce
  • 1 cup beef broth
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil (optional, for browning)

Instructions

  1. In a large bowl, combine ground beef, uncooked rice, onion, garlic, salt, pepper, egg, and Worcestershire sauce. Mix until just combined.
  2. Shape mixture into 1 1/2-inch meatballs (makes about 16–18).
  3. Optional: In a large skillet, heat olive oil and brown the meatballs on all sides (for added flavor and texture).
  4. In a medium bowl, mix together tomato sauce, beef broth, and Italian seasoning. Pour over meatballs.
  5. Cover and simmer over low heat for 45–50 minutes, or until rice is tender and meatballs are cooked through. Stir occasionally to prevent sticking.
  6. Serve hot with mashed potatoes, pasta, or crusty bread.
