Description

A fun and delightful snack mix perfect for unicorn-themed parties, combining popcorn, cereal, and colorful candies.


Ingredients

  • 8 cups popped popcorn lightly salted, unpopped kernels removed
  • 3 cups square lattice cereal e.g., Rice Chex
  • 16 oz white chocolate chips or candy melts
  • 1 cup mini pastel marshmallows
  • 1 cup pastel candy-coated chocolates e.g., Spring M&Ms
  • 0.25 cup rainbow sprinkles nonpareils
  • 1 tbsp coconut oil optional, to thin chocolate

Instructions

  1. Line two large baking sheets with parchment paper or wax paper.
  2. In a very large bowl, gently toss together the popped popcorn and the square cereal.
  3. In a microwave-safe bowl, melt the white chocolate chips (and coconut oil, if using) in 30-second increments at 50% power, stirring well after each increment until completely smooth.
  4. Pour the melted white chocolate over the popcorn and cereal mixture. Gently fold with a spatula until evenly coated.
  5. While still sticky, gently fold in the pastel marshmallows and candy-coated chocolates.
  6. Spread the mixture in a single, even layer onto the prepared baking sheets.
  7. Immediately sprinkle the rainbow sprinkles evenly over the top of the wet mixture.
  8. Let the mix sit at room temperature for 30-45 minutes (or 15 mins in the fridge) until the chocolate hardens. Break into pieces and serve.
