Description

A luxurious and creamy white chocolate mousse tart with a delicate crust, perfect for special occasions.


Ingredients

  • 1 1/4 cups (150g) all-purpose flour
  • 1/4 cup (30g) powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (113g) cold unsalted butter, cubed
  • 1 large egg yolk
  • 12 tablespoons cold water
  • 8 ounces (225g) high-quality white chocolate, chopped
  • 1 cup (240ml) heavy cream, chilled
  • 1/4 cup (60ml) milk (whole or 2%)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon unflavored gelatin (optional, for extra stability)
  • Fresh raspberries, strawberries, or blueberries (for topping)
  • White chocolate curls or shavings (for topping)
  • Mint leaves for garnish
  • Light dusting of powdered sugar (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, powdered sugar, cinnamon, nutmeg, and salt.
  3. Add the cold butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Stir in the egg yolk and enough cold water to form a dough.
  5. Press the dough into a tart pan and chill for 30 minutes.
  6. Bake the crust for 20 minutes or until golden. Let it cool completely.
  7. For the mousse, melt the white chocolate in a double boiler or microwave until smooth.
  8. In another bowl, whip the heavy cream to soft peaks.
  9. Fold the melted white chocolate into the whipped cream gently until combined.
  10. Add in the milk, vanilla extract, and gelatin (if using) and mix until smooth.
  11. Pour the mousse into the cooled tart crust and refrigerate until set, about 2 hours.
  12. Before serving, top with fresh berries, white chocolate curls, and mint leaves, then dust with powdered sugar.

  • Use high-quality white chocolate for the best flavor.
