A luxurious and creamy white chocolate mousse tart with a delicate crust, perfect for special occasions.

- 1 1/4 cups (150g) all-purpose flour
- 1/4 cup (30g) powdered sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup (113g) cold unsalted butter, cubed
- 1 large egg yolk
- 1–2 tablespoons cold water
- 8 ounces (225g) high-quality white chocolate, chopped
- 1 cup (240ml) heavy cream, chilled
- 1/4 cup (60ml) milk (whole or 2%)
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon unflavored gelatin (optional, for extra stability)
- Fresh raspberries, strawberries, or blueberries (for topping)
- White chocolate curls or shavings (for topping)
- Mint leaves for garnish
- Light dusting of powdered sugar (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the flour, powdered sugar, cinnamon, nutmeg, and salt.
- Add the cold butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Stir in the egg yolk and enough cold water to form a dough.
- Press the dough into a tart pan and chill for 30 minutes.
- Bake the crust for 20 minutes or until golden. Let it cool completely.
- For the mousse, melt the white chocolate in a double boiler or microwave until smooth.
- In another bowl, whip the heavy cream to soft peaks.
- Fold the melted white chocolate into the whipped cream gently until combined.
- Add in the milk, vanilla extract, and gelatin (if using) and mix until smooth.
- Pour the mousse into the cooled tart crust and refrigerate until set, about 2 hours.
- Before serving, top with fresh berries, white chocolate curls, and mint leaves, then dust with powdered sugar.
Notes
- Make sure the heavy cream is well chilled for optimal whipping.
- Use high-quality white chocolate for the best flavor.
- If using gelatin, dissolve it in a little warm water before adding to the mousse mixture.
