- 4 cups romaine lettuce, chopped
- 4 slices thick-cut bacon, cooked and crumbled
- 2 hard-boiled eggs, chopped
- 1 ripe avocado, diced
- ½ cup crumbled blue cheese
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- ¼ cup red onion, thinly sliced
- ¼ cup balsamic vinaigrette (homemade preferred)
Instructions
- Prepare your ingredients: Wash and dry all fresh produce. Chop romaine into bite-sized pieces.
- Cook the bacon: In a skillet over medium heat, cook bacon until crispy (about 6-8 minutes). Drain on paper towels.
- Boil the eggs: Bring a pot of water to boil. Add eggs and boil for 9-12 minutes for hard-boiled eggs. Cool under cold running water, then peel.
- Chop everything: Dice avocados, halve cherry tomatoes, slice cucumber and red onion, and crumble blue cheese.
- Assemble the salad: In a large bowl, combine lettuce, bacon bits, chopped eggs, tomatoes, cucumber slices, red onion rings, and blue cheese.
- Dress and serve: Drizzle balsamic vinaigrette over the salad before serving. Toss gently to coat.
