Description

A delicious salad featuring chickpeas, feta cheese, and cranberries, dressed with a tangy apple cider vinaigrette.


Ingredients

Scale
  • 2 cans (15 oz each) chickpeas
  • 1/3 cup dried cranberries
  • 1/4 cup fresh parsley
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • Salt and black pepper to taste
  • 1/4 cup apple cider vinegar
  • 2 tbsp olive oil
  • 1/2 cup feta cheese

Instructions

  1. Rinse and drain the chickpeas.
  2. In a large bowl, combine chickpeas, dried cranberries, and chopped parsley.
  3. In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, and olive oil.
  4. Season the dressing with salt and black pepper, to taste.
  5. Pour the dressing over the chickpea mixture and toss to coat.
  6. Add feta cheese on top and gently mix.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

  • This salad can be made a day in advance; the flavors will meld beautifully.
  • Adjust the sweetness of the dressing by adding more or less honey based on your preference.
  • Feel free to add more vegetables like cucumbers or bell peppers for additional crunch.
