- 1 cup peanut butter
- 2 large eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/3 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- Line or grease a muffin tin.
- Mix peanut butter and eggs until smooth.
- Add sugar and vanilla and mix well.
- Stir in baking soda evenly.
- Fold in chocolate chips.
- Fill muffin cups 3/4 full.
- Bake for 12–15 minutes.
- Cool for 10 minutes.
- Serve and enjoy.
Notes
- Make sure the peanut butter is at room temperature for easier mixing.
- Store leftovers in an airtight container for up to a week.
- You can substitute dark chocolate chips for a richer flavor.
