- ½ cup cottage cheese (blended until smooth)
- ¼ teaspoon cream of tartar
- ½ teaspoon salt
- 1 tablespoon cornstarch or arrowroot powder (optional)
- 1 teaspoon honey or a pinch of sweetener (optional)
Instructions
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate egg whites and yolks into two bowls.
- Add cream of tartar to egg whites and beat until stiff peaks form.
- In the yolk bowl, mix blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using) until smooth.
- Gently fold the whipped egg whites into the yolk mixture in three additions using a spatula.
- Scoop mixture onto baking sheet to form 6–8 rounds and shape evenly.
- Bake for 25–30 minutes until tops are golden brown and set.
- Let cool completely before serving.
