Description

A hearty and nutritious vegetable soup designed for easy weight loss, made with a variety of vegetables and beans.


Ingredients

Scale
  • 1 medium sweet potato
  • 3 large carrots
  • 1 celery stalk
  • 1 small yellow onion
  • 1 garlic clove
  • 30 ounces navy beans (or black beans)
  • 4 cups low-sodium vegetable broth
  • Optional: diced tomatoes, baby spinach, extra-virgin olive oil

Instructions

  1. Prepare your ingredients by peeling and chopping the sweet potato, carrots, celery, onion, and garlic.
  2. In a slow cooker, add sweet potato cubes, sliced carrots, diced celery, diced onion, minced garlic.
  3. Season with salt, black pepper, allspice, paprika, and bay leaf. Pour in the vegetable broth until covered.
  4. Cover the slow cooker and set to low for 6–8 hours until vegetables are tender.
  5. About 5 minutes before serving, stir in baby spinach until wilted.
  6. Ladle into bowls and drizzle with olive oil if desired.

Notes

  • For a spicier flavor, consider adding red pepper flakes.
  • This soup can be stored in the refrigerator for up to 5 days.
