- 3–4 lbs chuck roast
- 2 cups beef broth
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Pat the chuck roast dry and season all sides with salt and pepper.
- In a hot skillet with olive oil, sear the beef on all sides until browned.
- Layer the sliced onions and minced garlic at the bottom of your slow cooker.
- Place the seared beef over the onions and garlic.
- In a small bowl, whisk together the beef broth, Worcestershire sauce, and tomato paste.
- Pour the mixture over the beef, ensuring the liquid covers at least half the roast.
- Cover the slow cooker with the lid and cook on LOW for 8 hours.
- Once the beef is fork-tender, shred it in the pot and stir into the juices.
- Garnish with fresh parsley if desired and serve hot.
