- 2 tablespoons honey or maple syrup
- 1 teaspoon pure vanilla extract
- 1/2 cup (75 g) fresh blueberries
- 1/2 cup (75 g) fresh raspberries
- 1/2 cup (75 g) sliced strawberries
- 2 tablespoons chopped pistachios or almonds (optional)
- 1 tablespoon shredded coconut (optional)
- Zest of 1 lemon (optional)
Instructions
- Prepare the baking sheet: Line a baking sheet (approx. 9×13 inches or similar) with parchment paper.
- Mix the yogurt base: In a medium bowl, mix Greek yogurt, honey (or maple syrup), and vanilla extract until well combined and smooth.
- Spread yogurt mixture: Spread the yogurt mixture evenly over the prepared baking sheet to about 1/4-inch thickness.
- Add toppings: Scatter the berries evenly over the yogurt. Sprinkle with chopped nuts, coconut, and lemon zest if using.
- Adhere the toppings: Gently press toppings into the yogurt with clean hands or a spatula to help them adhere.
- Freeze the bark: Freeze, uncovered, for at least 2 hours or until completely firm.
- Break into pieces: Once frozen, remove from the freezer and break into shards or bark pieces.
- Serve or store: Serve immediately or store in a freezer-safe container for up to 1 month.
