Ingredients

  • 1¼ cups sugar
  • 1 cup plain Greek yogurt
  • ½ cup vegetable oil or unsweetened applesauce
  • 3 large eggs
  • ½ tsp vanilla
  • ½ tsp salt
  • 2 tsp baking powder
  • 1½ cups all-purpose flour
  • 2 cups Fruity Pebbles or other Post cereals

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix sugar, oil (or applesauce), yogurt, eggs, and vanilla until smooth.
  3. Add salt, baking powder, and flour. Mix again until smooth.
  4. Gently fold in the cereal.
  5. Spray a loaf pan well with non-stick cooking spray.
  6. Pour the batter into the pan and sprinkle about a handful of cereal on top.
  7. Bake for 45–55 minutes, or until a toothpick comes out clean.
