- 1 cup creamy peanut butter
- 1/2 cup coconut milk

- 2 tablespoons lime juice

- 1 teaspoon chili paste (adjust to taste)
- Chopped peanuts for garnish
Instructions
- Marinate the Chicken: In a bowl, mix soy sauce, vegetable oil, brown sugar, minced garlic, ground coriander, turmeric, cumin, salt, and pepper. Add chicken thighs, coat well, cover, and marinate for at least 1 hour (or overnight).
- Prepare the Peanut Sauce: In a saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and chili paste. Stir until smooth and heated through. Adjust seasoning to taste.
- Preheat the Grill: Preheat your grill or grill pan over medium-high heat. Soak wooden skewers in water for 30 minutes if using.
- Skewer the Chicken: Thread the marinated chicken onto skewers, leaving space between pieces.
- Grill the Satay: Grill skewers for 5-7 minutes on each side until cooked through and internal temperature reaches 165°F (75°C).
- Serve: Serve hot with peanut sauce drizzled on top or on the side for dipping. Garnish with chopped peanuts.

- For a vegetarian version, consider using tofu instead of chicken.
