Description

Fruity Pebbles Sushi is a fun and colorful treat that combines the flavors of marinated chicken satay with a delicious peanut sauce.


Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup creamy peanut butter
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon chili paste (adjust to taste)
  • Chopped peanuts for garnish

Instructions

  1. Marinate the Chicken: In a bowl, mix soy sauce, vegetable oil, brown sugar, minced garlic, ground coriander, turmeric, cumin, salt, and pepper. Add chicken thighs, coat well, cover, and marinate for at least 1 hour (or overnight).
  2. Prepare the Peanut Sauce: In a saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and chili paste. Stir until smooth and heated through. Adjust seasoning to taste.
  3. Preheat the Grill: Preheat your grill or grill pan over medium-high heat. Soak wooden skewers in water for 30 minutes if using.
  4. Skewer the Chicken: Thread the marinated chicken onto skewers, leaving space between pieces.
  5. Grill the Satay: Grill skewers for 5-7 minutes on each side until cooked through and internal temperature reaches 165°F (75°C).
  6. Serve: Serve hot with peanut sauce drizzled on top or on the side for dipping. Garnish with chopped peanuts.
