Description

Garlic Butter Lasagna Roll-Ups are a delicious and creamy pasta dish filled with ricotta, mozzarella, and spinach, all enveloped in rich garlic butter sauce.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 1/4 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 1/4 cup fresh basil, chopped
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Cook lasagna noodles in salted boiling water until al dente, then drain and lay flat to prevent sticking.
  3. In a bowl, mix ricotta, mozzarella, Parmesan, spinach, basil, eggs, garlic, salt, pepper, and red pepper flakes.
  4. Melt butter in a saucepan, add garlic and cook until fragrant, then stir in parsley, salt, and pepper.
  5. Spread 2 tablespoons of the filling onto each noodle, roll tightly, and place seam-side down in the baking dish.
  6. Drizzle half of the garlic butter sauce over the roll-ups.
  7. Sprinkle remaining mozzarella and Parmesan over the roll-ups.
  8. Cover with foil and bake for 25 minutes.
  9. Remove foil and bake an additional 10 minutes until cheese is golden.
  10. Drizzle remaining garlic butter sauce over roll-ups and let rest for 5 minutes before serving.

Notes

  • Make sure not to overcook the noodles; they should be al dente.
  • You can adjust the amount of red pepper flakes according to your spice preference.
