Description
Garlic Butter Pasta Aglio e Olio is a delicious and simple Italian pasta dish made with garlic, olive oil, and parsley.
Ingredients
Scale
- 14 ounces spaghetti
- 6 cloves garlic, thinly sliced
- 1/3 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/4 cup fresh parsley, chopped
- Grated Parmesan cheese, for serving (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to package directions.
- While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium heat. Add sliced garlic and sauté until fragrant and golden, about 2–3 minutes. Avoid burning the garlic.
- Stir in the red pepper flakes until evenly distributed.
- Reserve 1/2 cup of pasta water, then drain the spaghetti. Add drained spaghetti to the skillet and toss thoroughly to coat, adding reserved pasta water as needed for a silky sauce.
- Adjust seasoning with salt and freshly ground black pepper. Stir in chopped fresh parsley for color and freshness.
- Transfer to serving plates and finish with grated Parmesan cheese if desired. Serve immediately.
Notes
- Make sure to use high-quality extra virgin olive oil for the best flavor.
- The amount of red pepper flakes can be adjusted according to your spice preference.
- This dish is best enjoyed fresh, but leftovers can be stored in the fridge for a day.
