Description

Garlic Butter Pasta Aglio e Olio is a delicious and simple Italian pasta dish made with garlic, olive oil, and parsley.


Ingredients

  • 14 ounces spaghetti
  • 6 cloves garlic, thinly sliced
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to package directions.
  2. While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium heat. Add sliced garlic and sauté until fragrant and golden, about 2–3 minutes. Avoid burning the garlic.
  3. Stir in the red pepper flakes until evenly distributed.
  4. Reserve 1/2 cup of pasta water, then drain the spaghetti. Add drained spaghetti to the skillet and toss thoroughly to coat, adding reserved pasta water as needed for a silky sauce.
  5. Adjust seasoning with salt and freshly ground black pepper. Stir in chopped fresh parsley for color and freshness.
  6. Transfer to serving plates and finish with grated Parmesan cheese if desired. Serve immediately.
