Description
A delicious and creamy Garlic Butter Shrimp Scampi Lasagna that combines the flavors of shrimp scampi with classic lasagna.

- 9 lasagna noodles, cooked and drained
- 1 1/2 pounds large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- Juice of 1 lemon
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1 cup ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (plus extra for garnish)
Instructions
- In a large skillet over medium heat, melt 2 tablespoons of butter. Add garlic and red pepper flakes, sauté for 1 minute.
- Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until just pink. Squeeze in lemon juice and remove shrimp from pan. Set aside and chop half of them into bite-sized pieces.
- In the same skillet, add the remaining 2 tablespoons of butter. Stir in chicken broth and heavy cream. Let it simmer for 5 minutes until slightly thickened. Add Parmesan and season with additional salt and pepper to taste. Stir in chopped parsley.
- In a small bowl, mix the ricotta cheese with the egg and a pinch of salt and pepper until smooth.
- Preheat oven to 375°F (190°C). In a 9×13-inch baking dish, spread a thin layer of sauce. Add a layer of 3 lasagna noodles, half the ricotta mixture, chopped shrimp, a handful of mozzarella, and a bit more sauce. Repeat layers, ending with noodles, sauce, whole shrimp on top, and remaining mozzarella and Parmesan.
- Cover loosely with foil and bake for 25 minutes. Uncover and bake an additional 10–15 minutes until bubbly and golden.
- Let rest for 10 minutes before slicing. Garnish with fresh parsley and serve warm.
Notes
- For a spicier kick, increase the amount of red pepper flakes.
- Ensure the shrimp are cooked just until pink to avoid overcooking.
- Letting the lasagna rest before slicing helps it hold its shape.
