Description

A quick and delightful recipe for garlic chicken cooked with broccoli and spinach, packed with flavor and nutrition.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon soy sauce (optional)
  • ¼ teaspoon red pepper flakes (optional, for some heat)
  • Lemon wedges, for serving (optional)

Instructions

  1. Prepare the Ingredients: Gather all ingredients and cut the chicken into bite-sized pieces. Rinse broccoli and spinach in cold water.
  2. Heat Oil: In a large skillet, heat olive oil over medium-high heat.
  3. Cook Chicken: Add the chicken pieces to the skillet. Season with salt and black pepper. Cook for 5-7 minutes, or until the chicken is browned and cooked through.
  4. Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add Broccoli: Toss in the broccoli florets and continue to stir-fry for 3-4 minutes until they turn bright green and are crisp-tender.
  6. Add Spinach: Fold in the fresh spinach and cook until wilted, about 1-2 minutes.
  7. Add Seasonings: If desired, drizzle with soy sauce and sprinkle with red pepper flakes. Stir well to combine.
  8. Taste & Adjust: Taste the dish and adjust seasoning as needed.
  9. Serve Immediately: Remove from heat and serve hot, accompanied by lemon wedges if desired.

Notes

  • For added flavor, marinate the chicken in garlic and olive oil for 30 minutes prior to cooking.
  • Feel free to add other vegetables such as bell peppers or snap peas.
  • For a healthier option, use less oil or substitute with a non-stick cooking spray.
