A delicious garlic herb chicken served with creamy mashed potatoes and roasted carrots, perfect for a comforting dinner.

- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 pounds potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- 1/2 cup milk
- Salt and pepper to taste
- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with salt, pepper, and half of the minced garlic.
- Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, until golden brown.
- In a small bowl, mix the dried thyme, rosemary, and oregano.
- Sprinkle the herb mixture over the chicken, and add the remaining garlic to the pan.
- Pour in the chicken broth, then place the skillet in the oven. Roast for 15-20 minutes until the chicken is cooked through.
- Meanwhile, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter and milk; mash until creamy. Season with salt and pepper.
- For the carrots, toss them in a mixture of olive oil, honey, salt, and pepper in a separate baking dish. Roast in the oven for 20-25 minutes until tender and caramelized.
- Once the chicken is done, remove the skillet from the oven and transfer the chicken to a plate to rest.
- Place the skillet over medium heat, stir in the heavy cream and simmer for 2 minutes, scraping any bits from the bottom of the pan for a sauce.
- To serve, divide the creamy mashed potatoes and roasted carrots among four plates. Top with the garlic herb chicken, spooning the sauce over the top. Garnish with fresh parsley.
Notes
- Make sure not to overcook the chicken to keep it juicy.
- You can substitute heavy cream with a lighter alternative if desired.
