A delicious recipe for Garlic Herb Steak Bites served with crispy roasted potatoes, perfect for a hearty meal.

- 1 ½ lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp smoked paprika (optional)
- 1 tsp salt
- ½ tsp black pepper
- 1 lb sirloin steak, cut into 1-inch cubes
- 2 tbsp olive oil (divided)
- 3 garlic cloves, minced
- 2 tbsp unsalted butter
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C). Toss the baby potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper in a large bowl. Spread them out on a baking sheet in a single layer.
- Roast the potatoes for 25-30 minutes, stirring halfway through, until they’re golden and crispy on the outside and tender on the inside.
- While the potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the steak bites with salt and pepper.
- Add the steak bites to the skillet in a single layer (work in batches if needed). Sear for 2-3 minutes on each side until they develop a golden-brown crust. Remove the steak bites and set aside.
- Reduce the heat to medium and add the remaining olive oil and butter to the skillet. Stir in the minced garlic, rosemary, and thyme, cooking for about 1 minute until fragrant.
- Return the steak bites to the skillet and toss them in the garlic herb butter until well-coated. Remove from heat.
- Plate the roasted potatoes alongside the steak bites, garnish with fresh parsley, and serve immediately.
Notes
- Feel free to adjust the seasoning to your preference.
- For extra flavor, marinate the steak bites for a few hours before cooking.
- Serve with a side salad for a complete meal.
