Instructions
- Wash and dry the zucchinis, then slice into thick half-moons or bite-sized chunks.
- In a large bowl, toss zucchini with olive oil, garlic powder, salt, and pepper until well-coated.
- Sprinkle in Parmesan and panko breadcrumbs. Toss again to coat all sides evenly.
- Preheat your air fryer to 400°F (200°C). Arrange zucchini in a single layer (work in batches if needed). Air fry for 12–14 minutes, shaking the basket halfway, until golden and crispy.
- Transfer to a serving bowl, sprinkle with extra Parmesan, and garnish with chopped herbs if desired. Serve hot!
