Ingredients

  • 1 lb fresh salmon filet
  • 3 Tbsp Olive oil, divided
  • 1 1/2 tsp Garlic salt (preferably Lawry’s Brand)
  • 1/2 tsp Black pepper
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 1/2 red bell pepper, seeded and diced
  • 3 Tbsp unsalted butter, divided
  • 1 cup Panko bread crumbs
  • 2 large eggs, lightly beaten
  • 3 Tbsp mayonnaise
  • 1 tsp Worcestershire sauce
  • 1/4 cup parsley, finely minced

Instructions

  1. Preheat the oven to 425˚F. Line a rimmed baking sheet with parchment or a silicone liner. Place the salmon in the center, skin-side-down. Drizzle with 2 Tbsp olive oil and season with 1 tsp garlic salt and the black pepper. Bake uncovered for 10-15 minutes, or until just cooked through. Remove from oven, cover with foil, and let rest for 10 minutes.
  2. While the salmon rests, heat a skillet over medium heat with 1 Tbsp olive oil and 1 Tbsp butter. Add diced onion and bell pepper, sautéing until golden and softened, about 7-9 minutes. Remove from heat.
  3. Flake the salmon with forks, discarding the skin and any bones. In a large mixing bowl, combine the flaked salmon, sautéed vegetables, bread crumbs, eggs, mayonnaise, Worcestershire sauce, remaining garlic salt, black pepper, and parsley. Mix well.
  4. Heat the remaining oil and butter in a clean non-stick skillet over medium heat. Form the salmon mixture into patties, about 2 inches wide and 1/3 to 1/2 inch thick. Fry for 3 to 4 minutes per side, or until golden brown and cooked through. If they brown too fast, reduce the heat. Transfer to a paper towel-lined plate to drain.
