Description
A delicious recipe for golden crusted salmon that is easy to prepare and packed with flavor.
Ingredients
Scale
- 1 lb fresh salmon filet
- 3 Tbsp Olive oil, divided
- 1 1/2 tsp Garlic salt (preferably Lawry’s Brand)
- 1/2 tsp Black pepper
- 1 medium yellow onion, finely diced (about 1 cup)
- 1/2 red bell pepper, seeded and diced
- 3 Tbsp unsalted butter, divided
- 1 cup Panko bread crumbs
- 2 large eggs, lightly beaten
- 3 Tbsp mayonnaise
- 1 tsp Worcestershire sauce
- 1/4 cup parsley, finely minced
Instructions
- Preheat the oven to 425˚F. Line a rimmed baking sheet with parchment or a silicone liner. Place the salmon in the center, skin-side-down. Drizzle with 2 Tbsp olive oil and season with 1 tsp garlic salt and the black pepper. Bake uncovered for 10-15 minutes, or until just cooked through. Remove from oven, cover with foil, and let rest for 10 minutes.
- While the salmon rests, heat a skillet over medium heat with 1 Tbsp olive oil and 1 Tbsp butter. Add diced onion and bell pepper, sautéing until golden and softened, about 7-9 minutes. Remove from heat.
- Flake the salmon with forks, discarding the skin and any bones. In a large mixing bowl, combine the flaked salmon, sautéed vegetables, bread crumbs, eggs, mayonnaise, Worcestershire sauce, remaining garlic salt, black pepper, and parsley. Mix well.
- Heat the remaining oil and butter in a clean non-stick skillet over medium heat. Form the salmon mixture into patties, about 2 inches wide and 1/3 to 1/2 inch thick. Fry for 3 to 4 minutes per side, or until golden brown and cooked through. If they brown too fast, reduce the heat. Transfer to a paper towel-lined plate to drain.
Notes
- Ensure the salmon is fresh for the best flavor.
- Adjust the seasoning according to your taste.
- These patties can be served with a side salad or on a bun as a sandwich.
