- 24 Golden Oreo cookies, crushed
- 6 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, hulled and chopped
- 1/2 cup sour cream
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- Additional strawberries for garnish
Instructions
- Preheat your oven to 325°F (160°C). In a medium bowl, combine the crushed Golden Oreo cookies and melted butter. Mix well until the crumbs are evenly coated. Press the mixture firmly into the bottom of a greased 9×9-inch baking pan to form a crust. Bake for 10 minutes, then remove and let it cool slightly.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Add in the granulated sugar and continue mixing until well combined. Scrape the sides of the bowl as needed.
- Mix in the vanilla extract, followed by the eggs one at a time, ensuring each is fully incorporated before adding the next. This helps prevent overmixing. Add the sour cream, cornstarch, and salt, and mix until just combined.
- Gently fold in the chopped fresh strawberries into the cheesecake mixture.
- Pour the cheesecake mixture over the cooled Oreo crust, spreading it evenly. Tap the pan on the counter to eliminate air bubbles. Bake in the preheated oven for 35-40 minutes or until the center is set and the edges are lightly golden.
- Remove the cheesecake bars from the oven and let them cool at room temperature for about 1 hour. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Carefully lift the cheesecake out of the pan and slice into bars. Garnish each bar with additional fresh strawberries.

- For best results, refrigerate overnight before serving.
- Can substitute other cookies for the crust if desired.
