- 6 cups fresh mixed greens, washed and thoroughly dried
- 2 cups fresh strawberries, hulled and sliced
- 1 cup crumbled feta cheese
- 1/2 cup pecans, roughly chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat oven to 350°F. Spread pecans in single layer on baking sheet and toast for 5-7 minutes until fragrant and lightly browned. Remove immediately to cool.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until emulsified and smooth.
- Hull and slice strawberries, thinly slice red onion, and chop fresh mint leaves.
- In a large salad bowl, arrange mixed greens. Top with strawberries, toasted pecans, red onion, crumbled feta cheese, and chopped mint.
- Drizzle with dressing and toss gently to combine. Serve immediately.
Notes
- For added sweetness, consider using ripe strawberries.
- This salad is best served fresh but can be stored in the refrigerator for a few hours before serving.
- Feel free to substitute walnuts for pecans if desired.
