A delicious and easy recipe for Greek Chicken Gyros, featuring marinated chicken, homemade tzatziki sauce, and fresh toppings.

- 1½ lbs boneless, skinless chicken thighs (or breasts)
- 3 tablespoons olive oil
- Juice of 1 lemon
- 4 garlic cloves, minced
- 1 tablespoon red wine vinegar
- 1 tablespoon plain Greek yogurt
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup plain Greek yogurt (for tzatziki)
- ½ cucumber, grated and drained
- 2 cloves garlic, minced (for tzatziki)
- 1 tablespoon olive oil (for tzatziki)
- 1 tablespoon lemon juice (for tzatziki)
- 1 tablespoon chopped fresh dill (or 1 tsp dried, for tzatziki)
- Salt to taste (for tzatziki)
- 4–6 pita breads or flatbreads
- Sliced red onion
- Diced tomato
- Shredded lettuce
- Feta cheese (optional)
Instructions
- Marinate the Chicken: In a bowl, whisk together all marinade ingredients. Add chicken and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
- Prepare the Tzatziki: Combine all tzatziki ingredients in a bowl. Stir well, taste for salt, and chill until ready to use.
- Cook the Chicken: Grill, pan-fry, or bake the marinated chicken until golden and cooked through (internal temp 165°F). Let rest, then slice into strips.
- Warm the Pita: Lightly warm pitas or flatbreads in a skillet or oven.
- Assemble the Gyros: Spread tzatziki sauce on the pita, layer with chicken, tomatoes, onion, lettuce, and feta if desired.
- Serve: Fold and serve warm, optionally wrapped in parchment for easy eating!
Notes
- For best flavor, marinate the chicken overnight.
- Feel free to customize toppings based on your preference.
- Leftover chicken can be stored in the refrigerator for up to 3 days.
