Description

A delicious and easy recipe for Greek Chicken Gyros, featuring marinated chicken, homemade tzatziki sauce, and fresh toppings.


Ingredients

  • lbs boneless, skinless chicken thighs (or breasts)
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 4 garlic cloves, minced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon plain Greek yogurt
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt (for tzatziki)
  • ½ cucumber, grated and drained
  • 2 cloves garlic, minced (for tzatziki)
  • 1 tablespoon olive oil (for tzatziki)
  • 1 tablespoon lemon juice (for tzatziki)
  • 1 tablespoon chopped fresh dill (or 1 tsp dried, for tzatziki)
  • Salt to taste (for tzatziki)
  • 46 pita breads or flatbreads
  • Sliced red onion
  • Diced tomato
  • Shredded lettuce
  • Feta cheese (optional)

Instructions

  1. Marinate the Chicken: In a bowl, whisk together all marinade ingredients. Add chicken and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
  2. Prepare the Tzatziki: Combine all tzatziki ingredients in a bowl. Stir well, taste for salt, and chill until ready to use.
  3. Cook the Chicken: Grill, pan-fry, or bake the marinated chicken until golden and cooked through (internal temp 165°F). Let rest, then slice into strips.
  4. Warm the Pita: Lightly warm pitas or flatbreads in a skillet or oven.
  5. Assemble the Gyros: Spread tzatziki sauce on the pita, layer with chicken, tomatoes, onion, lettuce, and feta if desired.
  6. Serve: Fold and serve warm, optionally wrapped in parchment for easy eating!
