A delicious and flavorful dish featuring Greek chicken meatballs served over zesty lemon orzo.
Ingredients

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan
- 1/4 cup chopped fresh parsley
- 1 minced garlic clove
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 beaten egg
- 1 tbsp olive oil (for cooking)
- 1 cup orzo
- 2 cups chicken broth
- 1 tbsp olive oil
- Zest and juice of 1 lemon
- Salt and pepper to taste
- Additional fresh parsley for garnish
Instructions
- In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, garlic, oregano, salt, black pepper, and egg. Mix thoroughly.
- Shape the mixture into 1-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Cook the meatballs for 6-8 minutes, turning until golden and fully cooked. Remove and set aside.
- In a separate saucepan, bring chicken broth to a boil. Add orzo and cook for 8-10 minutes until al dente. Drain and return to the pot.
- Mix olive oil, lemon zest, lemon juice, salt, and pepper into the cooked orzo.
- Serve by placing lemon orzo on a plate and topping with chicken meatballs. Garnish with parsley.
Notes
- This dish can be served as a main course or as part of a Mediterranean-inspired meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
