Description

A delicious and flavorful dish featuring Greek chicken meatballs served over zesty lemon orzo.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 1/4 cup chopped fresh parsley
  • 1 minced garlic clove
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 beaten egg
  • 1 tbsp olive oil (for cooking)
  • 1 cup orzo
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • Additional fresh parsley for garnish

Instructions

  1. In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, garlic, oregano, salt, black pepper, and egg. Mix thoroughly.
  2. Shape the mixture into 1-inch meatballs.
  3. Heat olive oil in a large skillet over medium heat. Cook the meatballs for 6-8 minutes, turning until golden and fully cooked. Remove and set aside.
  4. In a separate saucepan, bring chicken broth to a boil. Add orzo and cook for 8-10 minutes until al dente. Drain and return to the pot.
  5. Mix olive oil, lemon zest, lemon juice, salt, and pepper into the cooked orzo.
  6. Serve by placing lemon orzo on a plate and topping with chicken meatballs. Garnish with parsley.
