A delightful recipe for Greek Stuffed Onions filled with a savory mixture of beef, rice, and herbs, topped with a rich tomato sauce.

- For the Onions: 4 medium Yellow Onions oval-shaped
- For the Filling: 1 lb Ground Beef or substitute with lentils or mushrooms
- 1/4 cup Fresh Parsley chopped
- 1 cup Short Grain or Arborio Rice soaked beforehand
- 2 cloves Garlic Cloves minced
- 1 cup Grated Tomato
- 2 tbsp Tomato Paste
- 2 tbsp Lemon Juice
- 1/4 cup Fresh Chopped Mint
- 1 tsp Salt
- 1 tsp Black Pepper
- 2 tbsp Chicken Stock Paste or vegetable stock
- 1 tsp Dried Oregano
- For the Tomato Sauce: 1 can Canned Roma or Whole Tomatoes
- 1 cup Water
Instructions
- Prepare Onions: Trim the tops and bottoms of the onions. Boil in salted water for 10-15 minutes, then let cool.
- Prepare Tomato Sauce: Blend canned tomatoes, water, tomato paste, lemon juice, salt, and pepper until smooth.
- Make Filling: Sauté diced onions and garlic in olive oil until fragrant. Add ground beef and cook until browned. Mix in grated tomato, tomato paste, soaked rice, lemon juice, parsley, mint, and spices, simmer for 8-10 minutes.
- Stuff the Onions: Carefully separate onion layers and fill each with 2 tablespoons of the rice mixture. Roll tightly.
- Bake: Preheat oven to 425°F (220°C). In a baking dish, layer some sauce, add stuffed onions, pour remaining sauce, cover with foil, and bake for 30 minutes. Uncover and bake for another 25-30 minutes until golden and tender.
- Serve: Garnish with parsley and enjoy hot, optionally with crusty bread for dipping.

- Feel free to substitute ground beef with a vegetarian option for a meat-free version.
- Soaking the rice beforehand helps it cook evenly while baking.
