Description

A delicious and easy-to-make Green Bean and Chicken Rice Bake that combines tender chicken, rice, and fresh green beans topped with melted cheddar cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain rice
  • 2 1/2 cups chicken broth
  • 2 cups fresh green beans, trimmed
  • 1 cup milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked chicken, long-grain rice, chicken broth, milk, chopped onion, minced garlic, dried thyme, paprika, salt, and pepper. Mix well until all ingredients are combined.
  3. Pour the mixture into a greased 9×13 inch baking dish. Spread it evenly across the dish.
  4. Arrange the fresh green beans on top of the chicken and rice mixture, pressing them gently into the filling.
  5. Cover the baking dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil and sprinkle the shredded cheddar cheese evenly over the top.
  7. Return to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden, and the rice is tender.

Notes

  • For added flavor, consider using rotisserie chicken.
  • Feel free to substitute other vegetables if desired.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
