Description
A delicious and easy-to-make Green Bean and Chicken Rice Bake that combines tender chicken, rice, and fresh green beans topped with melted cheddar cheese.

- 2 cups cooked chicken, shredded
- 1 cup long-grain rice
- 2 1/2 cups chicken broth
- 2 cups fresh green beans, trimmed
- 1 cup milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine the cooked chicken, long-grain rice, chicken broth, milk, chopped onion, minced garlic, dried thyme, paprika, salt, and pepper. Mix well until all ingredients are combined.
- Pour the mixture into a greased 9×13 inch baking dish. Spread it evenly across the dish.
- Arrange the fresh green beans on top of the chicken and rice mixture, pressing them gently into the filling.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- Remove the foil and sprinkle the shredded cheddar cheese evenly over the top.
- Return to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden, and the rice is tender.
Notes
- For added flavor, consider using rotisserie chicken.
- Feel free to substitute other vegetables if desired.
- This dish can be made ahead of time and stored in the refrigerator before baking.
