Description
A refreshing and healthy Green Detox Soup packed with vegetables and nutrients, perfect for cleansing.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1 cup spinach leaves
- 1 cup kale, stems removed and chopped
- 1 small green apple, peeled and chopped
- 1/2 tsp ground turmeric
- 4 cups vegetable broth
- Salt and pepper, to taste
- Juice of 1/2 lemon
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until translucent, about 3–4 minutes.
- Add celery, zucchini, and broccoli. Cook for 5 minutes, stirring occasionally.
- Stir in the spinach, kale, and green apple. Cook for 2 minutes until wilted.
- Add turmeric, salt, pepper, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove from heat and let cool slightly. Use an immersion blender or transfer to a blender to puree until smooth.
- Stir in lemon juice, adjust seasoning if needed, and serve warm.
Notes
- Store leftovers in the fridge for up to 4 days or freeze for up to a month.
- Add fresh herbs like parsley or cilantro for extra flavor.
- For a thinner soup, add more broth after blending.
