Description

A refreshing and healthy Green Detox Soup packed with vegetables and nutrients, perfect for cleansing.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 1 cup spinach leaves
  • 1 cup kale, stems removed and chopped
  • 1 small green apple, peeled and chopped
  • 1/2 tsp ground turmeric
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until translucent, about 3–4 minutes.
  2. Add celery, zucchini, and broccoli. Cook for 5 minutes, stirring occasionally.
  3. Stir in the spinach, kale, and green apple. Cook for 2 minutes until wilted.
  4. Add turmeric, salt, pepper, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Remove from heat and let cool slightly. Use an immersion blender or transfer to a blender to puree until smooth.
  6. Stir in lemon juice, adjust seasoning if needed, and serve warm.

Notes

  • Store leftovers in the fridge for up to 4 days or freeze for up to a month.
  • Add fresh herbs like parsley or cilantro for extra flavor.
  • For a thinner soup, add more broth after blending.
