Description

A delicious Grilled Balsamic Vinaigrette Sandwich Melt featuring fresh mozzarella, roasted red bell peppers, and spinach, all drizzled with a flavorful balsamic mixture.


Ingredients

  • 8 slices of sourdough bread
  • 1 cup fresh mozzarella cheese, sliced
  • 1 cup roasted red bell peppers, sliced
  • 1 cup fresh spinach leaves
  • 1/2 cup balsamic vinaigrette (store-bought or homemade)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Olive oil, for grilling

Instructions

  1. Start by preheating your grill or a non-stick skillet over medium heat. While heating, prepare the ingredients by slicing the sourdough bread, fresh mozzarella, and roasted red bell peppers. Rinse and dry the fresh spinach and basil.
  2. In a bowl, combine the balsamic vinaigrette, chopped basil, garlic powder, salt, and pepper. Mix until well combined. This will be drizzled inside the sandwich for extra flavor.
  3. Lay 4 slices of sourdough bread on a clean surface. Layer them with fresh mozzarella, roasted red bell peppers, and spinach. Drizzle a generous amount of the balsamic mixture over the fillings. Top with the remaining 4 slices of bread to form sandwiches.
  4. Brush the outside of each sandwich with olive oil. Place the sandwiches on the preheated grill or skillet. Grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.
  5. Once grilled, remove the sandwiches from the heat. Let them cool for a minute, then slice in half. Serve with extra balsamic vinaigrette on the side for dipping, if desired.
