A delicious Grilled Balsamic Vinaigrette Sandwich Melt featuring fresh mozzarella, roasted red bell peppers, and spinach, all drizzled with a flavorful balsamic mixture.

- 8 slices of sourdough bread
- 1 cup fresh mozzarella cheese, sliced
- 1 cup roasted red bell peppers, sliced
- 1 cup fresh spinach leaves
- 1/2 cup balsamic vinaigrette (store-bought or homemade)
- 1/4 cup fresh basil leaves, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- Olive oil, for grilling
Instructions
- Start by preheating your grill or a non-stick skillet over medium heat. While heating, prepare the ingredients by slicing the sourdough bread, fresh mozzarella, and roasted red bell peppers. Rinse and dry the fresh spinach and basil.
- In a bowl, combine the balsamic vinaigrette, chopped basil, garlic powder, salt, and pepper. Mix until well combined. This will be drizzled inside the sandwich for extra flavor.
- Lay 4 slices of sourdough bread on a clean surface. Layer them with fresh mozzarella, roasted red bell peppers, and spinach. Drizzle a generous amount of the balsamic mixture over the fillings. Top with the remaining 4 slices of bread to form sandwiches.
- Brush the outside of each sandwich with olive oil. Place the sandwiches on the preheated grill or skillet. Grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.
- Once grilled, remove the sandwiches from the heat. Let them cool for a minute, then slice in half. Serve with extra balsamic vinaigrette on the side for dipping, if desired.
Notes
- Feel free to add other vegetables like avocado or arugula for extra flavor!
- This recipe can easily be doubled for larger gatherings.
- Customize the cheese by trying goat cheese or feta for a different twist.
