Description

A delicious and healthy salad featuring grilled chicken, sun-dried tomatoes, avocado, and spinach, topped with a tangy dressing.


Ingredients

  • 6 oz baby spinach
  • 1 lb boneless skinless chicken breasts (grilled)
  • 1 large avocado (sliced)
  • 1/3 cup sun-dried tomatoes (chopped)
  • 3/4 cup feta cheese (crumbled)
  • 1/4 cup pine nuts
  • 1/4 cup olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp red apple vinegar
  • 1 1/2 Tbsp finely minced fresh parsley
  • 1 garlic clove (minced)
  • 1 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/2 tsp honey
  • 1/2 tsp dijon mustard
  • Salt and freshly ground black pepper

Instructions

  1. Whisk together olive oil, lemon juice, vinegar, parsley, garlic, basil, oregano, honey, salt, and pepper in a bowl.
  2. On serving plates, layer baby spinach evenly.
  3. Top with grilled chicken strips or cubes, avocado slices, sun-dried tomatoes, crumbled feta cheese, and pine nuts.
  4. Drizzle the dressing over each salad before serving.

Notes

  • For added flavor, marinate the chicken before grilling.
  • Can substitute feta cheese with goat cheese for a different taste.
