Ingredients

- 6 oz baby spinach
- 1 lb boneless skinless chicken breasts (grilled)
- 1 large avocado (sliced)
- 1/3 cup sun-dried tomatoes (chopped)
- 3/4 cup feta cheese (crumbled)
- 1/4 cup pine nuts
- 1/4 cup olive oil
- 2 Tbsp fresh lemon juice
- 1 Tbsp red apple vinegar
- 1 1/2 Tbsp finely minced fresh parsley
- 1 garlic clove (minced)
- 1 tsp dried basil
- 1/4 tsp dried oregano
- 1/2 tsp honey
- 1/2 tsp dijon mustard
- Salt and freshly ground black pepper
Instructions
- Whisk together olive oil, lemon juice, vinegar, parsley, garlic, basil, oregano, honey, salt, and pepper in a bowl.
- On serving plates, layer baby spinach evenly.
- Top with grilled chicken strips or cubes, avocado slices, sun-dried tomatoes, crumbled feta cheese, and pine nuts.
- Drizzle the dressing over each salad before serving.
Notes
- For added flavor, marinate the chicken before grilling.
- Can substitute feta cheese with goat cheese for a different taste.
- Use raw pine nuts for extra crunch.
