Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey (or maple syrup for a vegan alternative)
  • 1 cup mascarpone cheese (or Greek yogurt for a lighter option)
  • Fresh mint leaves, for garnish
  • Crushed pistachios, for topping (optional)

Instructions

  1. Preheat the Grill: Heat your grill to medium-high. If using a charcoal grill, make sure the coals are even and glowing.
  2. Prepare the Peaches: Brush the cut sides of the peach halves lightly with olive oil and sprinkle them with a pinch of salt and pepper.
  3. Grill the Peaches: Place the peaches cut-side down on the grill. Close the grill lid and cook for about 4-5 minutes until grill marks appear and the peaches are slightly softened. Flip them over and grill for an additional 2-3 minutes.
  4. Make the Glaze: While the peaches are grilling, add the balsamic vinegar and honey to a small saucepan over medium heat. Bring it to a gentle simmer and cook for about 5-7 minutes until it thickens slightly and becomes syrupy. Remove it from heat and set aside.
  5. Prepare the Serving Dish: Once the peaches are grilled, remove them from the grill and place them cut-side up on a serving platter.
  6. Add Mascarpone: Spoon a generous dollop of mascarpone cheese on top of each peach half.
  7. Drizzle and Garnish: Drizzle the honey-balsamic glaze over the mascarpone and peaches, then sprinkle with crushed pistachios (if using) and fresh mint leaves.
  8. Serve and Enjoy: Serve immediately while still warm for a delicious dessert or a delightful addition to a summer barbecue.
