Description

Grilled Salmon with Mango Salsa and Rice is a delicious and healthy dish that combines flavorful grilled salmon with fresh mango salsa and fluffy jasmine rice.


Ingredients

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup jasmine rice
  • 2 cups water
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/2 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 jalapeño, finely chopped (optional)

Instructions

  1. Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper on both sides.
  2. Rinse the jasmine rice under cold water until the water runs clear. In a medium-sized saucepan, combine rinsed rice and water. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes or until tender.
  3. While the rice cooks, prepare the mango salsa by combining diced mango, red onion, red bell pepper, cilantro, lime juice, and jalapeño (if using) in a bowl. Gently fold and season with salt to taste.
  4. Place salmon fillets on the grill, skin side down. Grill for 4-5 minutes on each side or until cooked through and flakes easily with a fork.
  5. Fluff the jasmine rice with a fork, divide among plates, and top with grilled salmon and mango salsa.

  • Adjust the spiciness by omitting the jalapeño if desired.
