Description

Grilled Shrimp Pineapple Skewers are a must-try delight, combining the fresh flavors of shrimp and pineapple with a savory marinade.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 cups fresh pineapple, cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into 1-inch pieces
  • 1/4 cup fresh cilantro leaves, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and finely chopped (optional)
  • 3 tablespoons olive oil
  • Zest and juice of 2 limes
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Extra lime wedges for garnish
  • Additional chopped fresh cilantro for garnish

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together olive oil, lime zest and juice, honey, cumin, smoked paprika, salt, pepper, minced garlic, cilantro, and jalapeño until well combined.
  2. Marinate the shrimp: Add shrimp to the marinade and toss thoroughly to coat. Cover and refrigerate for 15 to 20 minutes.
  3. Assemble the skewers: Thread shrimp, pineapple chunks, bell pepper, and red onion onto skewers, alternating ingredients for balanced color and flavor distribution.
  4. Prepare the grill: Preheat grill to medium-high heat and lightly oil the grates to prevent sticking.
  5. Grill the skewers: Place skewers on grill and cook for 2 to 3 minutes per side, turning once, until shrimp are opaque throughout and vegetables show light charring.
  6. Finish and serve: Remove skewers from grill and garnish with fresh cilantro and lime wedges. Serve immediately.

Notes

  • For extra heat, keep the seeds in the jalapeño.
  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Serve with a side of rice or salad for a complete meal.
